As well as being a great, light dip, tzatziki is also awesome when served alongside dishes with mint and cumin inside as the tastes really go well together. This recipe is cheap, fast, and uses ingredients which a lot of people would usually have in their house.
Ingredients
– 250g natural yoghurt (or 2 small pots) (If you have Turkish or Greek yoghurt available even better, although this will change the calorie count).
– 1 clove garlic
– Half a cucumber
– 1 tbsp Olive oil
– Salt
– Pepper
Instructions
- Start by peeling the cucumber, cutting it in half lengthways and scraping out the seeds in the middle using a teaspoon. Chop finely and transfer to a suitable bowl.
- Mince the garlic and add to the bowl. Add in the yoghurt, the olive oil, sprinkle in some salt and papper and mix well.
- …And there you go 🙂 Serve with bread, meats like lamb, vegetables, in sandwiches, salmon, etc…

Thanks BG – I remember back 7 years ago or so when I was a poor student – I used to head out to the local store near closing time when they'd reduce the price on stuff about to expire and would pick up various dips going cheap. I was looking at the ingredients of Tzatziki one day and remember thinking "you're kidding, right? That's IT??" Even store-made stuff seems to use just these basic ingredients – no funky E-numbers and preservatives. Definitely try and use greek yoghurt though – it's much richer and creamier!
