Green Pea Soup

H ardly any calories, and one of the cheapest recipes I’ve posted here to date, this is a great dish – really nourishing, and rather green! Serve with some warm bread for a great lunch!
- 250g dried split green peas
- 2 onions
- 1-2 stock cubes
- 1 tsp Thyme
- Start off by soaking the peas in water for around 4 hours with a teaspoon of salt, stirring occasionally. After this time, add to a pan, cover with water, and bring to the boil. Allow the peas to boil vigorously in the water for a few minutes, maybe 4 or 5. Pour away the water and cover with 1 litre of fresh, cold water.
- Peel and chop the onions roughly while you bring the water to the boil again, and while boiling, add the onions to the water. Lower the temperature and allow the soup to simmer gently until the peas are soft, which should take around 1 hour.
- Add the stock cubes and the thyme and bring to the boil again while stirring. If you wish, you can blend the soup if you like it smooth, else serve it as is in bowls with mustard and fresh bread.
