Grilled Red Pepper and Feta Dip

I do believe this has a different name but I can’t seem to find it alas… but I digress. Did I talk before about how I love dips? What’s not to love? So many different types, colours, flavours – and you can change them in so many different ways. I’m a bit of a garlic fiend myself so I was a bit annoyed that this dip wasn’t quite as garlicky as I usually like, so for the recipe I’ve upped the quantity a little. Serve up with just about anything you like – chips, bread, raw vegetables etc!
- 2-3 red Bell Peppers
- 50g Feta Cheese
- 3 cloves Garlic
- 2 tbsp Olive Oil
- 1 tsp ground Cumin
You’ll also need
- Start off by placing the peppers and garlic (unpeeled) under the grill and heat, turning occasionally until the skin is blackened and charred – usually around 20 minutes.
- Wait for the peppers to cool a little before peeling off the skin. Cut open the peppers, remove the stalks and any seeds and drain away any juices. Peel the garlic and place the peppers and garlic into a Food Processor with the Cumin and Olive Oil. Add in a bit of Salt and Pepper and crumble in the Feta Cheese.
- Blend until smooth – around 1 minute and transfer to a suitably sized bowl or container. Allow to cool in the refrigerator for a few hours before eating and enjoy!
