Greetings readers! Apologies for the lack of updates for the last week. A week ago we had some family visiting and then I’ve been pretty busy in the last week but I’m back with a whole list full of things to make for next week. Today the weather was awesome and we had a picnic in the nearby forest and what better dish to have on a hot day than a cool and simple salad. A Macedonian friend of mine originally introduced me to this salad and I have to say it’s just amazing. Give it a try and see what you think!
- 1 large Cucumber
- 3-4 large Tomatoes
- 1-2 large red Peppers
- 1 Onion
- 150g – 200g Feta Cheese
- 2 tbsps Sunflower Oil
- 1 tbsp Olive Oil
- Start by peeling the cucumber. Trim the ends away and cut the cucumber into small pieces. Core and dice the tomatoes and then remove the tops from the peppers and take out the seeds. Cut them up to a similar size as the tomatoes. Mix the tomatoes, pepper and cucumber in a large bowl and then peel and chop the onion as finely as possible. Add this into the bowl as well and then add in the different oils to the bowl, add a good sprinkling of freshly ground salt and pepper and stir well.
- Grate the feta cheese (before making this dish I never even knew you could grate feta cheese!) and sprinkle the grated feta cheese on the top.
- Serve immediately with good, soft, fresh bread and enjoy!
