I love Oat Cakes, but unfortunately I can’t seem to find them anywhere in France. They are basically just oats and water, with a little bit of fat so why not make them myself? They go great with just butter, or add on a bit of cheese and some pepper for an awesome snack.

- 225g Rolled Oats
– 20g Butter
– 2tsps Salt
– 0.1 litres warm Water

A Food Processor

Instructions

  1. First, pre-heat the oven to 190 degrees Celsius and then start by transferring the oats to the food processor and chopping on high for about 20 seconds until the oats are finer.

  2. Transfer the oats to a bowl. Melt the butter and add, with the salt, to the bowl. Stir the butter in to the oats, before adding the warm water in and blending with the oats to form a stiff dough. Push the dough together into a ball and turn onto a lightly floured surface.

  3. Roll the dough out until very thin – around 0.3cm thick. Using a round cookie cutter, cut the dough into circles and place on a baking tray – no grease required.

  4. Place the trays into the oven and bake for between 15-20 minutes. The oat cakes should not be brown – only a slightly more golden tone of the original dough. When cooked, remove and allow to cool on a wire rack.

  5. Store in an air-tight tin when cooled completely – enjoy with butter or other toppings of your choice for breakfast, or just as a snack!
