Nothing says “home” quite like a plate of fresh baked cookies. I forgot to flatten these somewhat so the did end up a little more on the “cake” side but they’re still awesome! Stuffed with juicy raisins and the warm, spicy flavour of nutmeg you won’t find these lasting very long. Best to give some away so save yourself from the extra calories!
Ingredients
– 90g Butter
– 110g Dark brown sugar
– 1 egg
– 110g Self-raising flour
– 50g Rolled oats
– 140g Raisins
– 2tsps Ground Ginger
– 2tsps Ground Nutmeg
Instructions
- Start by pre-heating the oven to 180 degrees Celsius and then cream together the butter and the sugar and then mixing in the egg.
- Add the flour, oats, raisins, ginger and nutmeg to the bowl and stir in until blended to a loose paste.
- Grease 1 or 2 large baking sheets and using a teaspoon, place heaped spoonfuls of mixture onto the trays. Flatten out gently with a fork, ensuring you leave space in between each cookie. Put into the oven and bake until golden for about 10-15 minutes.
- Remove from the oven and allow to cool on the baking sheet. Store in an airtight tin when not being eaten, and enjoy!
